Caprese Salad

One of the many simple ways to squeeze a drop of Italian magic into a foreign land. No matter the land.

4 Slices Tomato - big Brandywine or Beefsteak tomatoes work best
4 Slices Mozzarella - thick, brave slices of quality mozzarella are essential
Olive Oil - extra virgin, cold pressed, the very best, of course
Fresh Basil
Salt

This Caprese is a simple concept, but it’s all about how you serve it, because nothing needs to be cooked here. You just stack the slices.

On the bottom is a slice of tomato, above that is a slice of thick mozzarella, and on top we drizzle some of that quality olive oil and sprinkle with fresh basil and salt to taste. We eat this with a knife and fork.

Pear & Cheese Delight

This sounds so, so wrong, but it tastes so, so right. You’ll hate people when you find out they knew about this all along and never told you.

Sliced Pear
Roquefort/Brie Cheese

Use a fork and plate to eat initially, but when you start making noises while you eat you’ll lock yourself in a room and eat with your hands just like I do. This stuff is deadly.

Egg & Hummus Collision

Super simple. Super tasty. Super filling. Super healthy.

2 Hard Boiled Eggs - removed from shell and chopped in half
Hummus - quality always matters
Spice - raid your cupboard. Go crazy. My husband uses garlic, paprika & pepper

To prepare we take about a half a heaped tablespoon of hummus and slide it off the spoon and onto the the flat portion of one of your half-hard-boiled eggs. Repeat until all your half-eggs are on a plate with a glob of hummus on them, then dust with spices to taste.

This snack has the added benefit that hard boiled eggs will keep for at least a week in most refrigerators, and hummus has a similar shelf life. So it’s easy to prepare and stores well. And boy does it fill you up!

Frozen Grapes

Most of the prep work for this is done by your freezer. And it feels like candy.

Take some Red Grapes, chop them in half and put them in the freezer. Once frozen they become a fantastically candy-like treat. Great for people like me who can’t shake their sweet tooth!

Chocolates & Berries

Provided you buy healthy berries and quality chocolate, then even high-level decadence like Chocolate & Berries can become a healthy way to snack!

Strawberries/Raspberries - fresh
Dark Chocolate - 70% cocoa if possible

Melt the dark chocolate in a pot or in the microwave. Chop the strawberries in half, or use whole Raspberries, and dip them in the melted chocolate with a toothpick sticking out the bottom of each berry so that it’s not too messy to dip or eat.

Don’t dip the entire berry in the chocolate, only dip it until it’s halfway covered in the chocolate, or you’ll lose them. Then put the berries, complete with their chocolate coats and toothpick tails, into the fridge on some foil for a couple of hours. I predict these things vanish about 10 minutes after the chocolate sets.
